To install a full image of an iOS beta on your iPhone, iPad or iPod, you should use the latest released version of iTunes. If you don't have it installed, you can download it from Apple's website. However, modern versions of iOS can be updated to a beta using an "over the air" (OTA) backup. OTA updates are faster and easier, and won't require the use of iTunes -- or even a computer.

Speaking of newer setups, though, it looks as if you can only use this download trick with apps that you have previously bought. If this older device is your sole iOS one then that's true, but if you have a newer one as well, you can do something more.
Buy it on the newer device and then it's in your Purchased history on all your iOS devices. And that means also on your older one. Give it a few minutes for the information to propagate through the App Store but thereafter you should be able to do this download trick and get the previous version that works with your older device.
A bit off topic but here is a support post I made regarding updating older iWork programs on a Mac. The Mac App store has a bug for older MacOSs whereby older iWork versions are advised they require updating, then presenting a splash page to either try or purchase iWork, but then going to the App Store and just locking up (spinning upper left swirl). Anyone that has recently had an old computer they are reformatting and updating may benefit from this:I recently had to wipe and then update a late 2008 MBP 15", which took me to MacOS High Sierra. Unfortunately Apple does not provide a way to update iWork even when I re-installed it from my original disks. It kept giving me an error to update and then hanging in the current Mac App store, such as you described.There is a way to update the older iWorks via update 9.3 which was released on 2012 (Apple's latest support note is dated Dec 19, 2016). This will bring iWork Pages up to v4.3, Numbers 2.3 and Keynote 5.3. That is as far as I could get, but these versions are stable and can open older windows format documents. You may also encounter issues if you are trying to download an older version of macOS that your Mac cannot support. Usually when Apple introduces a new Mac it will not be able to run the version of macOS that shipped before the one installed on that Mac. The older macOS might not support certain components in that Mac, for example.
If the old version of the OS you are after predates Snow Leopard and you have a developer account you might be able to get it from developer.apple.com/downloads. If you search within the OS X category you should see downloads for all versions of OS X, at least from version 10.3 to 10.6.
Have you heard about the previous versions feature in Windows 7? Previous versions are copies of files/folders that Windows automatically saves as a part of a restore point. This feature was first provided by Vista's Business, Ultimate and Enterprise versions, but now is available to all Windows 7 users.
I am confused about this topic. I have all itunes loaded on my windows PC. Will my itunes still play if I remove quicktime? Or do I need to replace it with another program. Lastly, I converted all MPEG itunes files to ACC, advanced audio coding, will I need to convert back to MPEG files?
